Where are kidney beans from?
The dark red legumes owe their name to their kidney-like shape. The legume originally comes from Peru and needs a humid climate to grow. Kidney beans are therefore mainly cultivated in America and Africa. The consistency of the red legumes is soft and slightly floury, the taste slightly sweet. Preparing dried kidney beans
Before you can process the dried kidney beans, they must first be cooked. There are two ways to do this: Either soak the beans for 6-8 hours (or overnight) in a bowl of cold water, rinse them well and cook them for about 30-40 minutes. Or cook the kidney beans directly (without soaking) in boiling water for about 60-70 minutes. Then rinse them with cold water and start preparing them: kidney beans are not only delicious with rice, in a stew, in a bean and corn salad, as a kidney bean dip or in your Buddha Bowl. You can even make sweet sins out of them. How about a juicy chocolate cake or a full-bodied chocolate cookie doughnut? Varieties & origins
Light red kidney beans
Very similar to the dark red variety, the colour of these beans is slightly lighter, and their skin is thinner. They are particularly popular in Portugal, Spain, and the Carribean.
Originally from Peru, in colonial times kidney beans found their way to Europe and Asia. Some regions of America and Africa are particularly well suited for growing kidney beans, as they need a humid climate to thrive; China grows kidney beans as well. Exact numbers of kidney bean cultivation worldwide cannot be found; the numbers you see on this map refer to different types of dry bean cultivation, and it can be assumed that kidney beans are the largest slice of the total.
