3 overripe bananas
2 tbsp. Flaxseed meal
100 g Brown almond paste
3 tbsp. Water
70 g Coconut flour
1 Tsp. Baking powder
90 g Almond flour
1 Tsp. Cinnamon, ground
1 Tsp. Cardamom, ground
1 Tsp. Vanilla extract
125 g (vegan) yogurt or almond drink
60 g dried ginger (best without sugar)

    Preheat the oven to 180 °C and line a loaf pan with baking paper.

  • Step 2/7

    Mix flaxseed meal and water to make a "flaxseed egg" and let stand briefly.

    Whisk the bananas in a bowl together with vanilla extract, almond paste and the "flax egg" until homogeneous.

    Mix almond flour, coconut flour, baking powder and spices and add to wet ingredients.

    Mix all ingredients into a homogeneous dough.
