Kombucha – what is that?

Let's start with the basics: Kombucha - pronounced like "Kom-buh-tsha" - is a delicious refreshing drink made by fermenting sweetened tea (usually green or black tea) with the help of a kombucha culture (more on this later). Kombucha is by no means a newfangled phenomenon, but has probably been around for almost 2,000 years! The origin of the drink is not 100 % certain, but it probably lies in Japan or China.

The Kombucha scoby: a true miracle weapon

Let's now address the elephant in the room - or rather the so-called SCOBY, which visually resembles a piece of cheese or a pancake. Even if it doesn't look particularly appealing at first glance, there is a lot in this gel-like piece! SCOBY stands for Symbiotic Culture of Bacteria and Yeast, a symbiotic bacteria and yeast culture. So far, so good, but what does that mean exactly? Also called yeast fungus, it is, together with the starter liquid, our basis for delicious kombucha. It is not a fungus in the true sense of the word, but a living ecosystem of its own. The bacteria and yeasts in the SCOBY begin their fermentation work in the sweetened tea mixture, driven by the sugar. We will spare you the exact chemical processes here. With each new process of fermentation, a new SCOBY grows on the surface of your vessel, so you are equipped with the Kombucha fungus for life.

Making kombucha at home

You finally want to know how the preparation works, don't you?

  1. Bring a pot with 300 ml of water to the boil and add 15 g of the tea mixture. Let it steep for 15 minutes.
  2. Now pour the tea mixture through the tea strainer into your 2 L fermentation jar. Add 1 l of cold water and 100 g of cane sugar and stir until the sugar has completely dissolved.
  3. Then attach the temperature gauge to the jar. Let the liquid cool until it is between 20 and 30 degrees Celsius. This step is very important, as the kombucha fungus will die if the temperature is too high.
  4. Now add the SCOBY along with the preparation liquid. Then cover the jar with the cotton cloth and secure it with the rubber band. This way your kombucha can breathe, but no bugs can get into the jar.
  5. Now the fermentation begins! Place the jar in a warm, sun-protected place for 7-9 days. Don't be surprised if a layer forms on the surface, this is your new Kombucha fungus.
  6. Almost ready! Taste your Kombucha now and then with a clean spoon. Does it taste good? Perfect, then you've made it! Still too sweet? Then let your Kombucha ferment further.
  7. Your Kombucha is now really ready! Before you can enjoy it, remove the SCOBY with washed hands (make sure you don't have any soap residue on your fingers!) and keep it with 250-500 ml of your kombucha drink: This is already the basis for a new round of kombucha fermentation.*
  8. The remaining kombucha should be filled into smaller, tightly sealable bottles and stored in the fridge to stop the fermentation process. If the small pieces of yeast in the drink bother you, simply pour the kombucha through a sieve into your bottles. Cheers!
  9. *Please rinse your fermentation jar with hot water, but without detergent, before each new fermentation.

    Double kombucha fermentation for extra flavour

    Of course you can enjoy your Kombucha pure - but if that's too boring for you, we have another step for you. For a particularly aromatic taste, you can add dried fruit, ginger and/or herbs of your choice to your already fermented and bottled Kombucha. During the second fermentation, the oxygen is removed from your bottle so that the bacteria cannot continue to work and your kombucha does not sour. However, the yeasts in the Kombucha fungus can continue to do their work at room temperature, as they don't need oxygen, and ensure that more carbonic acid is produced. So if you prefer your kombucha a little more sparkling (and with a certain flavour), leave your tightly closed bottle in a dark, warm place for around 3 days before putting it in the fridge. But be careful: Use high-quality bottles made of thicker glass for the secondary fermentation, don't fill them completely to the top with liquid and check the pressure regularly (by opening them briefly every day) so that your bottles don't burst!

SCOBY stands for "Symbiotic Culture of Bacteria and Yeast" and is the English name for the Kombucha fungus or tea fungus. This is a microorganism that consists of bacteria and yeasts, among other things.
Welcome to the SCOBY hotel! Kombucha mushrooms are best stored in the same way as you make kombucha. Place all unused SCOBYS on top of each other in a container, together with the liquid from a previous kombucha and sweetened tea. At room temperature and closed with a cotton cloth and rubber band, your inactive kombucha mushrooms can now rest for a while. Before you use a mushroom from your SCOBY Hotel again, wash it briefly with cold water (and clean fingers!). After about 5 fermentation processes, you can part with old SCOBYs with a clear conscience.

Yes, kombucha is vegan in itself. As a vegan living person, just make sure when adding dried fruits, for example, that they are not coated with shellac.
Kombucha is a delicious refreshing drink made by fermenting sweetened tea with the help of a fungus called kombucha. This fungus is its own ecosystem, consisting of bacteria and yeasts, among other things, and metabolizes sugar to produce a tart, fresh drink that is rightly very hyped at the moment.
This liquid is needed to keep the kombucha mushroom, or SCOBY, alive. It is included in the starter kit for your first Kombucha, after that you always keep 250-500 ml of your finished Kombucha and store your tea mushroom in it at room temperature - the birth of a new round of Kombucha fermentation, an eternal circle! ;)
It is best to use green tea or black tea. We have put together a delicious tea blend of both types in our starter set. If you need more, check out our tea assortment.
Kombucha and other fermented beverages are not 100% alcohol-free. Due to the low, but still contained, alcohol content due to the fermentation of the yeasts, we recommend that you do not drink kombucha during pregnancy and breastfeeding.
Don't worry, this just means that the fermentation of your kombucha was probably a bit too long. Remove the SCOBY along with 250-500 ml of your kombucha and save it for the next round of fermentation (which won't take that long, since your starter liquid is already quite acidic). The remaining kombucha can be used as a delicious salad dressing - just flavor it with some olive oil, honey and spices!

In the second fermentation, you can add a little more flavor and/or carbonation to your kombucha. For the former, simply add finely chopped fruits and herbs of your choice to the bottle into which you have filled your kombucha (i.e. not into your fermentation jar!) - dried fruits are also particularly suitable. For carbonation, leave your kombucha in the sealed bottle at room temperature for 1-2 days. This allows the yeasts contained in the drink to continue working and carbonic acid to develop. It is important that you use a high-quality, thick glass container, do not fill it completely to the top with liquid and regularly open the bottle briefly so that the pressure can escape and the bottle does not break. After that, you put the bottle in the refrigerator, which stops further fermentation.
Mold on your kombucha mushroom is very unlikely if you follow the enclosed instructions exactly. Also, for the most hygienic fermentation possible, it is important to rinse your fermentation jar thoroughly with hot water, but without detergent, before each use. And again as a reminder, make sure that you only handle the SCOBY with washed and well-dried hands so that neither germs nor soap residues get into your kombucha. By the way, brown shreds on your tea fungus are not mold, but residues of the yeast that you can easily rinse off.

Always put your ready-fermented kombucha in a tightly closed bottle in the refrigerator. This stops the fermentation process and the kombucha retains its sweet and sour taste.
No, because the sugar is needed so that the yeasts and bacteria of the kombucha mushroom can work. But don't worry - not much of the added sugar remains in the end, because it is metabolized for the fermentation. We recommend our organic raw cane sugar for a successful kombucha production and have therefore packed it in your starter kit.
Kombucha is produced by fermentation of the sugar-tea mixture. For this purpose, bacteria and yeasts are used, which are located in the so-called SCOBY. The yeasts convert the sugar into carbonic acid and alcohols, and the bacteria in turn turn turn the alcohols into acetic acid and lactic acid - hence the sour taste!

Great set if everything is included!

Have already made several kombucha runs with the set - has worked well every time. The instructions are foolproof and the Scoby does what it should do. Unfortunately, neither the tea nor the sugar was included in my set, on my contact with customer service I never heard anything. For this then the price is quite high.
