How is maple syrup harvested and produced?
The sugar maple grows mostly in eastern North America and Canada. Maple trees reach a height of up to 40 metres. They are tapped in February to extract the liquid gold. At this time, the weather conditions are perfect for harvesting: at night, the temperatures are below zero degrees and during the day, the sun warms the earth slightly. Now the maple tree can transport the nutrients from its roots into the buds. For our maple syrup, only a part of the sap is taken from the tree (about 10 %), so that it does not suffer any damage (similar to donating blood). After harvesting, the sap is heated. The reduction creates the syrup with the unique golden colour and the unique delicious taste. Pretty cool, right?
Maple syrup – Grade A, B or C?
The quality of maple syrup is indicated in different grades. These grades, which in Europe differ from the original quality definitions in Canada, theoretically range from AA to A, B, C and D and depend on the harvest period. In Germany, however, virtually only grade A and grade C are available (as explained by our managing director Piran in his maple syrup video, English subtitles available). Light maple syrup, like the one offered here, is produced in the first two weeks of the harvest period and is called grade A. It is characterised by its mild sweetness and typical amber colour. Grade C maple syrup is a much darker maple syrup that is harvested later. This is stronger in flavour and tends more towards a reddish brown in colour. Ultimately, the grades are therefore a matter of taste. We get our young grade A maple syrup directly from a "maple syrup tapper" in Canada.

Den richtigen Sirup für Dich zu finden war gar nicht so einfach: Wir haben uns für einen Grad A Ahorn Sirup entschieden, die Skala reicht aber von AA bis D. Welchen Grade der Sirup bekommt, hängt davon ab, wie viel Licht 1cm Sirup durchlässt. Grade AA ist sehr hell, Grade D sehr dunkel.
Wir finden: Ein guter Ahornsirup darf nicht zu aufdringlich sein und muss trotzdem eine leckere Süße haben. Wie der Sirup aussieht und schmeckt, hängt vom Zeitpunkt der Ernte ab.
Ungefähr 40 Liter Ahornsaft brauchen wir, um daraus 1 Liter leckeren Ahornsirup für Dich zu machen. Weil in so einem Baum ziemlich viel Flüssigkeit steckt, nimmt er uns das nicht übel.
