The cocoa tree and its fruits
It has never been a secret that we at KoRo love cocoa products – our many cocoa and cacao options are proof of that. Cocoa beans are nothing more than the seeds of the fruit that grow directly on the trunk of the cocoa tree. The cocoa beans are harvested twice a year. The main cultivation areas are scattered throughout the tropics in West Africa, Central and South America and Asia. The beans inside the fruit are well protected because they are individually surrounded by pulp. Through fermentation, the pulp can be carefully separated from the seeds. To do this, the pulp is usually placed on banana or palm leaves and covered with another layer of leaves. Due to the tropical heat, a fermentation process automatically begins, which lasts 5-10 days, after which the pulp has completely liquefied. By the way: The pulp can be used to make delicious cocoa fruit juice, among other things. For our cocoa nibs, the exposed beans are then dried, peeled, roasted and broken into small pieces - so you can use them directly as a topping! But you can also find them in our shop in their original state, as whole cocoa beans.

At KoRo, we analyse the greenhouse gas emissions that are produced during the production of our snacks. These include, among other things, CO2, methane and nitrous oxide. Criollo
Criollo cocoa is considered very noble and convinces with its intense and aromatic taste. Originally from Central America, it is also known as spiced cocoa because of its strong taste.
Native to Central America, where it was already cultivated in the Mayan era, cocoa was for a very long time a delicacy accessible only to the upper classes. Later, from 19th century onwards, cocoa began to be cultivated intensively, so as to allow the whole world to enjoy its unique taste in many different variations. Ivory Coast is the world's leading cocoa producer, followed by Ghana, Indonesia, Nigeria, Cameroon, Brazil and other countries. More than 5 million tons of cocoa are harvested each year worldwide. Did you know that about 50 cocoa beans are needed for a bar of chocolate?
Production
Wahr oder falsch? Naja, fangen wir von vorne an: Ohne Kakaobohne, kein Kakao und folglich auch keine Schokolade. Kakaobohnen sind die Samen der Kakaofrucht und wachsen bei Temperaturen von etwa 30 °C am Stamm des Kakaobaumes. Geerntet werden die Früchte mit Macheten und Sichelstäben
Als nächstes geht es für die Böhnchen zur Fermentation. Warum das notwendig ist, fragst Du Dich? So wird gewährleistet, dass sie das gewünschte Aroma erhalten. Bei diesem Prozess ändern die Bohnen ihre Farbe außerdem von weiß zu braun. Während der Gärung entsteht ordentlich Hitze zwischen den einzelnen Kakaobohnen. Die Folge: Die Bohnen werden feucht. Deswegen ...
... geht es für die Kakaobohnen nun in die Sonne, zum Trocknen. Das kann einige Wochen in Anspruch nehmen. Bevor es dann zu uns in den Onlineshop geht, müssen die Böhnchen abschließend noch geröstet werden.

Hey, thanks for your feedback. Unfortunately, the import costs for cocoa beans have risen sharply this year. The main reasons for this are high crop failures due to periods of drought alternating with heavy rainfall and flooding in the main cocoa-growing regions of Côte d'Ivoire and Ghana. Around 70 percent of cocoa beans come from these regions. Due to the price increase, KoRo has not negotiated any new contracts for the time being. The contracts for the new harvest will be negotiated in the fall. In the future, we plan to be able to offer a wide range of cocoa products again - organic and fairtrade, of course! Until then, we will also have to increase the price in line with our doubled purchase price. All the best from the KoRo team :)
