Can't resist coconut? Neither can we! For this recipe we're going to use it in all its forms: coconut puree, coconut flour, coconut shavings and coconut milk. After tasting your porridge, you'll feel like you've flown to the islands!
Ingredients
Serves two:
- 100g rolled oats
- 4 dried apricots
- 4 Medjool dates
- 2 tablespoons coconut flour
- 700ml coconut milk
- Sugar of your choice
Toppings :
- 1 banana
- 2 handfuls raspberries
- 2 tbsp coconut purée
- 2 tablespoons coconut shavings
Preparation
First, cut the apricots and dates into small pieces.
Pour the coconut drink into a saucepan, heat through and add the oats.
Simmer over low heat for about 5 minutes.
Then add the apricots, dates, coconut flour and coconut shavings. You can add milk if necessary.
Divide the porridge into two bowls and add the raspberries, half a banana and the toppings of your choice.
