How is black pepper grown and produced?
The whole peppercorns come from the pepper plant, mostly cultivated in India, Malaysia, Vietnam and Brazil. The fruits of the plant are growing in little ears, with each of those ones that can hold up to 150 seeds. The colour of the seeds vary very much according to their level of ripeness: unripe, the pepper fruit looks quite green and when they are just about to turn orange, they are harvested and dried, which gives them their brown colour and wrinkly structure.

Schwarzer Malabar Pfeffer
Der Malabar Pfeffer ist eine sehr hochwertige Pfeffersorte des echten Pfeffers (Piper nigrum) aus dem Südwesten Indiens; der Malabarküste oder auch Pfefferküste genannt. Dort wird aus noch grünen unreifen Pfefferbeeren gewonnen und anschließend unter der Sonne getrocknet. Du erkennst den hochwertigen Pfeffer an seinem grünlichen Schimmer. Der Malabar Pfeffer besitzt ein warmes intensives Aroma mit einer angenehmen Schärfe.
Ursprünglich stammt der echte Pfeffer aus der südindischen Malabarküste in Indien. Aber vor ca. 1000 Jahren kam der Pfefferanbau auch nach Indonesien und Malaysia und breitete sich von dort weiter aus. Heutzutage ist Vietnam aufgrund starker Regulierungen der Hauptexporteur für Pfeffer. Insgesamt wurden weltweit im Jahr 2017 ca. 690 Tonnen Pfeffer (piper nigrum) produziert.
