Juicy-salty pretzel pastry - of course, this also goes vegan!

Dissolve the yeast in the lukewarm milk and stir in the sugar.

Add the flour, fine salt and butter and knead the dough for about 7-10 minutes.

Form the dough into a ball and place it in a bowl, which you then cover with a cloth. Let the dough rest for 1 hour.

Boil the lye from 2 l of water and the sodium bicarbonate.

Portion the dough into 80 g pieces and form the rolls, sticks or pretzels. Let the pastries rise again for 20 minutes.

Let the pasta float in the lye for about 20 seconds.

Then sprinkle them with coarse salt and place them on a baking sheet.

Bake the pasta in a preheated oven at 200 °C top/bottom heat for about 15-20 minutes.
