Nut butter without palm oil!
Many conventional nut butters contain palm oil as a cheap ingredient to make them more spreadable. However, as you have certainly noticed, palm oil has come under increasing criticism in recent years. Many millions of hectares of rainforest have already been cleared for the cultivation of the oil palm, from which palm oil is extracted. For this reason, we do not use palm oil in our hazelnut cream. Instead, we focus on naturalness and are convinced that you will be able to taste the high-quality hazelnuts in our cream and their gentle processing. We also avoid adding refined sugar*. Production
Was ihren Standort anbelangt, ist die Haselnuss nicht besonders anspruchsvoll. Ihre Sträucher wachsen fast überall da, wo es einigermaßen windgeschützt ist und ihnen ein humusreicher Nährboden zur Verfügung steht. So findet sich die Haselnuss nicht nur in zahlreichen Ländern Südeuropas – vorwiegend in Spanien, Italien und Griechenland wieder, sondern ist auf der ganzen Welt beheimatet.
Der Haselnussstrauch gilt als besonders schnell wachsend. Er kann bis zu sechs Meter hoch und fünf Meter breit werden. Deshalb eignet er sich nicht nur für Nuss-Liebhaber, sondern wird auch häufig als Hecke genutzt. Pflanzen sollte man ihn im Herbst, noch vor dem ersten Frost.
Bei Haselnüssen handelt es sich um einsamige Nussfrüchte, die während ihrer Reifung bis zur Hälfte von einem grünen Fruchtbecher umgefasst werden. Sobald sie reif sind, nehmen sie ihre typische braune Farbe an und fallen von selbst zu Boden.
Anfang September beginnt die Haselnuss Ernte. Hierbei ist es wichtig, dass nur die reifen Nüsse, die durch das Schütteln der Sträucher herunterfallen, geerntet werden. Nach etwa dreimaligem „Abschütteln“ mit jeweils einem zeitlichen Abstand von drei Tagen ist die Ernte beendet.
Die Haselnuss findet ihren historischen Ursprung in der Türkei. Deshalb verwundert es nicht, dass die Türkei noch heute das Land mit dem ertragreichsten Haselnuss Anbau ist.
Nach der Ernte rotieren die Haselnüsse zunächst in einem Röstkessel an der freien Luft, während sie von Heißluftdüsen angestrahlt werden. Auf diese Weise wird eine gleichmäßige und somit schonende Röstung gewährleistet. Nachdem die Haselnüsse abgekühlt sind, werden sie in mehreren Durchgängen fein gemahlen, bis sie eine ausreichend cremige Konsistenz erhalten. Im letzten Schritt wird das Haselnussmus in Gläser abgefüllt, die anschließend fest verschlossen werden.
