Raw cane sugar - what is it?

Whole cane sugar (also known as panela), raw cane sugar and cane sugar all sound outrageously similar and so confusion can quickly arise. First, let's look at what they have in common: All three types of sugar are made from sugar cane grown in tropical countries such as Brazil, South Africa and Cuba. These countries also include Mozambique, where our raw cane sugar comes from - from 100% organic cultivation, of course! But what is the difference then? Apart from their names and origins, the sugar varieties are actually quite different from each other - both in taste and in production. Whole cane sugar is obtained from the sugar cane juice, which is thickened, dried and ground in the process. It has a very dark, brown colour and a strong flavour of its own. Raw cane sugar is much lighter, which is due to the fact that the thickened sugar cane juice is refined once for its production. Cane sugar is finally completely white because it is refined several times.

Clever cane sugar?

Of course, when it comes to sugar, "refined" is not a synonym for smart or clever. In the world of sugar, refined describes processed and isolated sugar. Incidentally, this also includes dextrose and fructose. Refining thus describes the process by which the sugar crystals obtained are repeatedly dissolved and crystallised. The aim is to increase the purity of the sugar crystals. Since raw cane sugar is only refined once, it still contains a residue of molasses, unlike cane sugar - hence the brown colour and the still slightly caramel-like aroma. This is no longer present in white cane sugar because it has been purified several times with water.

Die Halme der Pflanze haben einen Durchmesser von 2-5 cm und können eine Höhe von 3-6 Metern erreichen. In 2/3 der Halme ist das süße Mark enthalten. Es werden dementsprechend auch nur die Halme und nicht die Blätter weiterverarbeitet.

Je nach Region wird das Zuckerrohr nach 6-18 Monaten geerntet. Dementsprechend findet die Ernte auch überall in verschiedenen Monaten statt. Wie viele Ernten das Zuckerrohr liefert, hängt ebenfalls von der Region ab. In der Regel sind es aber zwei bis 5 Ernten.

Rohrzucker kann zu verschiedenen Produkten verarbeitet werden. Die Produkte reichen vom Rohrzucker Würfel bis zum Rohrzuckerschnaps. Dazwischen gibt es auch noch Peelings aus Rohrzucker und Rohrzucker-Sticks. Die Produktpalette lässt kaum einen Wunsch offen.

Das Zuckerrohr wird geschnetzelt und ausgepresst. Anschließend wird alles filtriert und der Saft eingedickt. Bei Rohrohrzucker wird der Saft daraufhin nur einmal raffiniert und dann getrocknet. Raffination bedeutet, dass der Saft auskristallisiert und danach durch Zentrifugieren von der Melasse getrennt wird.

Best sugar

For me, there is absolutely no alternative to this sugar, the only one I would try afterwards is panela. Raw cane sugar is more than popular with us. It's super fine, gives you that beach feeling as soon as you unpack it, and dissolves excellently. The taste is also excellent and the price-performance ratio is absolutely fantastic.

Sugar for the whole kitchen...

We need this raw cane sugar for baking and for cinnamon sugar. It is versatile, tastes good and replaces white sugar in many recipes. We often only use 2/3 of the sugar from the recipe when baking.
